My favorite meals from Pressed are the Vegan Spicy BBQ Kebab Panini, the Vegan Jaffa Salad, the Vegan Mandarin Miri Salad, and the Vegan Sweet & Spicy Kebab Bowl. I love all of these meals because of their bright flavors and variety of ingredients.

Shpindler, who opened the original Pressed Cafe in Nashua, N.H., grew up in the restaurant business. He and his family moved from Israel more than 30 years ago and purchased Manchester pizzeria Caesario's. Later, he struck out on his own and opened the Bridge Cafe and steak-and-sushi spot Mint Bistro.

With locations in Nashua, NH and this one in Burlington, Mass, Pressed is the brainchild of Roi and Miri Schpindler, a husband/wife team who believe that just because something's served quick, it doesn't have to suffer in terms of quality.
